About
What is usulchef?
usulchef is a cooking school centered on Turkish cuisine. It teaches dish families and techniques rather than isolated recipes. The goal is a reader who can understand any recipe they find and cook it.
The word usul (oo-SOOL) is Turkish for "method" or "the proper way of doing something." We keep it because no single English word covers both technique and the patience behind it.
Quantities are given in grams. Ratios and heat thresholds draw on sources such as Ruhlman (Ratio), Nosrat (Salt Fat Acid Heat), McGee (On Food and Cooking) and food safety agencies. All text is original.
usulchef is not connected to any television program or competition.
